Poha (Flattened rice flakes)

This is a popular breakfast dish in India. Many alterations are there, I'll be making a healthy yet tasty one. Quick and easy to make. Do try out. :)

Preparation time- 5 minutes
Cooking time- 5-7 minutes
Serves- 6

Ingredients-
Flatten rice flakes- 250 gms
Onion- 1 big(chopped)
Peanuts- handful
Green chili- 2 chopped
Curry leaves- 2 stems
Turmeric powder- 2 pinch
Red chili powder- 2 pinch
Whole red chili- 2
Mustard seeds- 1 table spoon
Coriander leaves- finely chopped (amount as per your taste)
Salt- as per taste
Vegetable oil- 4-5 table spoon

Prep- Wash the flattened rice under running water. Lose the water using a strainer.


Lets cook.. :)

1)  Heat oil in a wok/ pan. Add the whole red chilies, mustard seeds and half curry leaves stem.
2) Add the onions and green chilies immediately. Stir fry for 2 minutes.
3)  Add the washed flattened rice. And stir for sometime.
4) Add the turmeric, red chili powder and salt.
5) On high flame, fry it for 3 minutes.
6) Add rest of the curry leaves. and peanuts(fried). Stir again a little.
7) Serve hot.

For garnishing- Use the coriander leaves and Aloo bhujiya .







Light chicken curry

This is a tasty dish usually eaten at lunch/dinner. East and south Indians prefer to eat this with rice and north Indians prefer the same with Roti/Bread. This particular dish is cooked light, hence not very rich and has a liquid-ish curry.


Preparation time- 15 minutes(1 hour of marination of chicken excluded)
Cooking time- 15 or 20 minutes
Serves- 4

Ingredients-
Chicken- 1 kg
Onion- 2 medium(finely chopped)
Bay leaves - 2
Mustard oil- 1 table spoon
Boiled potato- 2 medium(Optional)

For Marination-
Ginger garlic paste- 2 table spoon
Yogurt- 2 table spoon
Vinegar- 2 table spoon
Red chili powder- 1 table spoon
Garam masala powder - 1 tea spoon
Turmeric- half tea spoon
Salt- as per taste
Mustard oil- 2 table spoon


Lets cook :)
1) Take a big bowl, Add the chicken, and all the marination ingredients. Mix well and refrigerate for 1 hour.
2)Heat mustard oil in a pan/wok. Add the bay leaves and onions. Fry till light pink.
3) Add the marinated chicken. Stir once for about 5 to 7 minutes. Let it fry a little.
4) Add warm water according to how soupy you want your stew to be. I added 3 glasses.
5)Let it cook on medium heat for 5 to 8 minutes.
6) Serve hot with rice or roti or bread.

Tip- Add potatoes cut in medium sized pieces and add them when the chicken is half fried(3)

Egg Chicken roll

A very tasty snack, also, filling! Can be eaten either in lunch, dinner or even breakfast! Tastes yum and also, you can add anything you want in it.. That's the best part :D

Preparation time- 15 minute
Cooking time- 5 minutes
Serves- As many as you make(one each)

Ingredients(for one roll)- 
Tortilla
OR
Refined flour ( to make tortilla)
Egg- 1(large) or 2(small)  per roll
Cucumber - 1/2(Sliced julienne)
Onion- 1/2 (Sliced)
Bell peppers( any color )- 1/4th portion(sliced)
Seekh Kebab/Any other kebab/shredded chicken(tandoori/boiled)- As per your taste
Tomato ketchup- 1 table spoon
Black pepper powder- 2 or 3 pinch
White oil- 2 table spoon
Salt- as per taste
Optional-
Prawn or any other meat- as per your taste
Mayo- 1 tea spoon(or your wish)
Mustard sauce- 1 tea spoon
Cheese(Cheddar or Parmesan) - Accordingly
Sweet corn- Accordingly
Chili flakes- 1 pinch

Roll away!
1) Use the tortilla, microwave them for 30 seconds or
Make a dough using the refined flour and water. Make tortilla out of it. 
2) Heat oil in a large pan. 
3) Beat the eggs, black pepper powder and salt. Add the beaten egg in the oil and immediately put the tortilla on the egg surface. 
4) Fry both sides on simmer for about 2 minutes.
5) Take a food wrapping butter paper, Keep the fried egg-tortilla on it. Add the cucumber, onion, bell peppers, your choice of meat, and pour some ketchup over it.
6) Additionally you can add, anything else you like or from the optional ingredients. 
7) Serve hot! 






Steamed garlic Fish (Basa/White fish)

This dish can be included in lunch/dinner or even for snacks. Very easy to cook, so go ahead and make it just about whenever you want :) Ingredients may vary according to your taste. Else, amazing taste.. and looks great.. :)

Preparation time- 10 minute
Cooking time- 10 minute
Serves- 4

Ingredients-
Basa fish- 3 fillets (Cut into 3/4 pieces each)
Mustard oil- 2 table spoon
Mustard sauce- 2 tea spoon

Spice to grind-
Garlic- 6 or 7 cloves
Kashmiri red chili(Whole)- 4 or 5 (previously soaked in warm water)
Cumin powder- 1/2 tea spoon
Turmeric powder- 1/2 tea spoon(Optional)
Salt- to taste



Lets cook :)
1) Take a bowl, Add the fish and the mixed spices(ground). Mix it well. Marinate for 2 minutes.
2) Add the mustard sauce and oil in the marinated fish.
3) Put the marinated fish in a steamer. Let it steam for 7/8 minutes.
4) Serve hot!

To garnish-
Serve it with a side salad or even rice.

Mochar Ghonkto( Minced banana flower dish)

This is an impeccable dish from the West Bengal. Tastes yum when prepared well.. Although try to get your hands on ripe banana flower, because this will be sweet, on the other hand, raw banana flower tastes bitter.

Preparation time- 10-15 minutes
Cooking time- 30 minutes
Serves- 4

Ingredients-
Banana flower- 1 big or 2 small
Bay leaves- 2
Whole cumin- 1 tea spoon
Dry red chili-2
Cumin powder- 1 tea spoon
Garam masala powder(Check previous recipes)- 2 tea spoon
Turmeric powder- Half tea spoon
Ginger garlic paste- one and half table spoon
Green chili- 2 (chopped)
Coconut- half(grated)
Mustard Oil- 5 table spoon
Salt- to taste
Sugar- half tea spoon
Ghee- 1 table spoon
Boiled potato- 1(optional)


Lets cook! :)
1) Look at the picture below
Remove all the florets in the banana flower. Then remove the scale and the pistil of each of the florets. Wash them.
a) Take 4 or 5 at a time and mince these.
b) Add some salt and turmeric powder to it.Boil them for 15 minutes
c) After they are soft enough, drain the water using a strainer.
2) Heat oil in a pan. Add bay leaves, whole cumin, dry red chilies(split in half) and 1 tea spoon of garam masala. Add the potatoes. Saute till light fried.
3) Add the boiled minced florets(1).
4) Add the ginger garlic paste, green chilies, cumin powder and salt. Saute & slow cook for 10  minutes.
5) After it looks a little fried and ready, add part of the grated coconut, the rest of the garam masala and sugar. Saute for 5 minutes.
6) Add the ghee.
7) Serve hot. Garnish with the rest of the grated coconut.

Chicken Stew(without oil)

This is a popular dish usually eaten when healthy food is needed.. or just for light eating. It's filling , wholesome and can be eaten anytime.

Preparation time- 5 minutes
Cooking time- 10 minutes
Serve- 2 or 3 people

Ingredients-
Chicken- 250 gms
Baby potato - 6/7
Large carrot - 1 (Sliced)
French beans- 150 gms (Sliced)
Onion- 1 large(Sliced)
Garlic - 6/ 7 cloves(Crushed)
Ginger- 2 inches (Crushed)
Bay leaves- 2
Green papaya - 1, small(sliced)
Yogurt- half cup
Lemon - 1
Cinnamon - 1 stick
Cloves- 4/5
Black peppercorn- 10 or 12(whole)
Salt- As per taste.

Lets cook! :)
1) Heat the pressure cooker for a minute.
2) Add all the ingredients one by one.
3) Add 3 large glasses of water into it.
4) Pressure cook for 10 minutes.

To garnish- Put sliced lemon and chopped coriander leaves on top of it
You can also add butter to enhance the taste(Optional)


Saabudana upma(Tapioca Sago)

This is a snack dish I prepare during fasting days or for light eating. Good, healthy and very tasty. Definitely a must try for all! :)

Preparation time- 5 minutes(Excluding one hour of pre-soaking the sago)
Cooking time- 7 minutes
Serves- 4

Ingredients-
Saabudana, big pearls(Tapioca Sago)- 200 gms
Onions- 2 large
Garlic- 4 cloves(finely chopped)
Ginger- 1 inch(finely chopped)
Cumin - 1/2 tea spoon
Potato- 1, boiled(cut in cubes)
Curry leaves- handful
Green chilies- 2(chopped)
Peanuts- handful
Lemon- 1, cut in half
Cooking oil- 3 table spoons
Salt- As per taste

Cook away!!
1) Heat oil in a pan/ wok.
2) Add the cumin and curry leaves. After few seconds, add the onion, garlic, ginger and green chilies. Saute for a minute
3) After the onions appear transparent, Add the potato. Saute for 2 minutes
4) Add the salt and the sago. Fry for some time. Sprinkle some water if needed.
5) Switch off the heat, squeeze half a lemon over it  and serve it hot.

To garnish- Add a stem of curry leaf, any fruit, one half of the lemon.
Also, Fry some peanuts in oil and add it on the top. Peanuts enhance the taste of sago.

Optional- You can also use, Carrots, French beans, Spinach, Cauliflower, Zucchini Etc.
Can also be cooked without garlic.

Noodles with a twist(Low Cal)

Noodles is one of the easiest food items that I cook. Breakfast, lunch or dinner, any time of the day is perfect for it. I add some more things to it, for a twist. Always experimenting! Tastes Yumm and looks awesome.. always!

Preparation time- 10 minutes
Cooking time- 10 minutes
Serves 4

Ingredients-
Noodles- 200 gms
Spring onion- 4 sticks(Green, chopped, and white portion, sliced,  kept separately)
Carrot- 1 medium sized(chopped)
French beans- 6 or 7(chopped)
Pointed gourd- 2(chopped)
Boiled potato- 1 small(chopped)
Eggs- 4(scrambled)
Meatballs/Meat kebab/ minced meat- According to your choice
Ginger- 1 inch(finely chopped)
Garlic cloves- 6 or 7(chopped)
Yellow, red and green bell pepper- 1/2 each(sliced)
Green chili- 1 chopped(Or as per your taste)
Red chili flakes- 1/2 teaspoon
Cabbage- 1/3rd (Shredded)
Black pepper powder- 1/2 tea spoon
Soy sauce- 2 table spoon
Chili sauce-3 table spoon
Sweet tomato sauce- 4 tablespoon
White vinegar- 2 tea spoon
Olive oil- 5 table spoon
Peanuts- handful
Salt- as per taste


Lets cook! :D
1) Heat 4 table spoon of oil in a wok or pan. Add the garlic immediately.
2) Add the ginger and green chilies after few seconds.
3) Add the chopped carrot, french beans, pointed gourds, potato and white portions of the spring onions. Saute for 2/3 minutes till half fried.
4) Add the soy sauce and vinegar, Saute again for 2/3 minutes.
5) Add the boiled noodles. Mix. Add tomato sauce, green chili sauce, black pepper powder and chili flakes. Mix it well for a minute.
6)Heat a table spoon of oil in another pan/wok. add the peanuts and saute for 2 minutes. Keep them aside.
7) Add sliced cabbage, 3 kinds of bell pepper, scrambled eggs and meat. Mix well.
8) Garnish with green portions of spring onion and the fried peanuts and serve hot!

Tips
- After boiling the noodles and straining them, Put them in chilled water in a large bowl to avoid the noodles sticking to each other. Avoid oil.
- You can also add prawns(shrimps), fish, cottage cheese or soy nuggets.
- Ajinomoto is optional.
- Baby corn and sweet corns can be added as well.

Turai curry(Ridged gourd curry)

Hi! This is a simple recipe which can be consumed anytime. Very good for summers. Can be consumed both for lunch and dinner.

Preparation time- 10 minutes
Cooking time- 10 minutes
Serves - 6

Ingredients-
Turai(Ridged gourd)- 700 gms
Medium sized potato(boiled)- 1
Ginger garlic paste- 1 tea spoon
Kashmiri red chili powder- 1/2 tea spoon
Coriander and cumin powder(mixed)- 1 teas spoon
Whole cumin seeds- 1/3rd tea spoon
Turmeric powder- 1/2 teaspoon
Cooking oil- 2 table spoon
Bay leaf- 1
Salt- as per taste

Lets cook!
1) Cut the gourd and potatoes into small pieces.
2)Heat oil in a pan/wok. Add the bay leaf and whole cumin seeds. When you hear a crackling sound after few seconds, add the turai(Ridged gourd).
3)Saute for 2 or 3 minutes. Add the ginger garlic paste, red chili powder, coriander & cumin powder(mixed), Turmeric powder and salt.
4) Saute for about 2 minutes and add the potatoes.
5) Cover the pan and let it cook for 5 minutes.
6) Serve Hot.

You can eat it along with Rice, Bread, Roti Etc.

Tips
-You can add prawns too. Tastes well. Add it with the potatoes.
-Onions can also be added. Must be added with the whole cumin seeds.

Stuffed pointed gourd(Green potato/Parwal)

This is a very delicious dish from West Bengal, India. We call it "potoler dorma" or bharwa parwal(in Hindi). Takes effort but it's all worth it.. :)

Preparation time- 30 minutes
Cooking time- 10 minute
Serves- 4


Ingredients-
Pointed gourds- 10 minimum
Vegetable oil- 1 big cup.
Ginger garlic paste-1 table spoon
Green chili(chopped)- 2
Any boneless fish- 200 gms( Can also use bone fish, but after boiling the fish and removing the bones)
Onions(chopped)- 2
Kashmiri red chili powder- 1/2 teas spoon(optional)
Turmeric powder- 1 pinch(optional)
Cumin powder- 1 tea spoon
Garam masala- 1 tea spoon

Get set go..
1) Take a fork and punch holes all over the gourd's body. Cut them few cms from both ends.
2) Slice off from tops of the gourds and remove the seeds to make them hollow. Keep the seeds aside.
3) Using your finger to rub some salt inside the gourd's body.
4) Boil the fish and after that mash it well.
5) Heat oil in a pan. Fry the prepared hollow gourds till half fried. Keep them aside.
6) Heat oil in another pan, add a pinch of garam masala. Also, Add the onions and green chilies. saute till onions turn pink.
7) Add the ginger garlic paste, kashmiri red chili powder, cumin powder, turmeric powder and the seeds(2). Saute it well for 2 or 3 minutes.
8) Add the mashed fish(4). Fry it till light brown. Add the rest of the garam masala. Take it off the pan. Let the mixture cool down.
9) Stuff the fried gourds with the mixture(8) till full.
10) Heat the gourds once again before serving.

Tip- You can also use minced meat, prawns, cottage cheese or soya granules instead of  fish.
Can be eaten as a starter or even in a tomato gravy.

Konkani prawns(White gravy)

This dish is a part of a very popular South Indian and Goan(western India) cuisine-

Preperation time- 10 minutes
Cooking time- 10 minutes
Serves- 4

Ingrediants-
Prawns(Shrimps)- 1/2 kg
Cocunut powder- 10 table spoon
Or
Coconut milk- 2 large cups
Vegetable Oil- 4 table spoon
Mustard seeds- 1 tea spoon
Cumin - 1/2 tea spoon
Dry red chili(whole)- 2
Onion(chopped) - 1 large
Green chili(slit)-2/3
Milk cream- 4 table spoon
Ginger Garlic paste - 1 table spoon
Curry leaves - Handful
Salt- as per taste

Garnish-
Red chili powder- 1 pinch (optional)
Coriander leaves- handful

Lets cook!
1) Heat the oil in a pan or a wok.
2) Add the mustard seeds, Cumin, dried red chili(broken in half) and half of the curry leaves.
3) After few seconds, add the chopped onion and Saute it well for 3 minutes till the onions turn light pink'ish.
4) Add the prawns(shrimps), stir for 2/3 minutes.
5) Add the ginger garlic paste. Mix it well for another 2/3 minutes.
6) Add salt as per taste.
7) Add the coconut milk or mix the coconut powder in warm water to make it  medium dense milk, and add.
8)Add the slit green chilies.
9)Boil it for 2/3 minutes.
10) Add the milk cream.
11) Boil it for another minute before turning off the heat.
12) Serve hot in a bowl.

Garnish
Add a pinch of red chili over it.
Add chopped coriander leaves.
Also add the rest of the curry leaves, as per your wish.

Tip- For vegetarians, use cottage cheese, soya nuggets or eggs.







Watermelon mojito

Summers are here.. and what can be better than a refreshing mojito! That too a watermelon mojito! :D

Preparation time- 10 minutes(excluding 1 hour of freezing of watermelon pieces.)
Cooking time- 5 minutes
Serves- 6/10(Depending on serving quantity)

Ingredients
Water melon- 2 Kg
Black salt- 1 tea spoon
Ice cubes- 10/12 pieces(preferably)
Lemon- 1

Garnish-
Salt
Sugar
Chaat masala - As per taste
Mint leaves with stem.
Crushed ice- optional
Garnishing umbrella

Let's beat the summers :D
1) Cut the water melon in medium pieces and freeze them for an hour.
2) Take them out of the freezer, half soft, half frozen.
3) Grind it in a mixer along with the black salt and ice cubes.
4) Take the mixture out in a big bowl and add lemon juice in it.
5)  Filter it with the help of a colander, with fine holes.
6) Pour it in a fine tall glass(or as you like)
7) Serve chilled

Garnish
1) Keep the empty glasses in freezer for 10 minutes(to get moist).
2) Mix the crushed salt and sugar(not powdered) and spread it on a plate.
3) Take those chilled glasses and place them upside down on the plate, for the brim to get coated with the mixture.
4) Drop some shredded mint leaves in the empty glass.
5)After pouring the juice in those glasses, sprinkle some chaat masala over it.
6)Add a stem of mint, a straw to drink from and a pretty umbrella if you have those..

Voila ... You have got some refreshing stuff to drink.. :D

Fish batter fry

This is a snack dish. You can also make this for Lunch/Dinner if you like. Looks awesome. Tastes even better! :D


Preparation time- 15 mins
Cooking time- 15 mins
Serves- 4

Ingredients-
Basa fish fillets(White fish)- 600 gms
Black pepper(crushed)- 2 table spoon
Lemon - 1(big)
Refined flour- 150 gms
Corn flour- 4 table spoon
Chilled plain soda- 3/4 cup
Sunflower oil- 1/2 litre
Salt- as per taste

Optional-
Green chili (paste)- 1/2 teaspoon
Oregano- 1 tablespoon

To Garnish-
Chilies
Chips
Salad

Cook away..! :D
1)Cut each fish fillets in 3 or 4 pieces.
2) Marinade the fish fillets with 1 table spoon black pepper, lemon juice and salt. Keep it in the fridge overnight.
3) Next day, take a big bowl, Add the refined flour, Corn flour, 1 table spoon black pepper and a pinch of salt. Mix it a little and then pour the soda into it. Make a semi thick batter out of it.
4) Take the fish out of the fridge.Coat the fillets with the batter.
5)Heat the oil in a pan. Deep fry the fillets till they are golden brown.
6) Serve hot, in a dish. Garnish with chilies and chips on side. Even salad will do.

Kheer( dessert made of rice)

Hi again!
So here's a dish I prepare on festive occasions. And since, today is the Bengali new year, I made this :)

Hope you'll enjoy!

Preparation time- 5/10 mins
Cooking time- 30 minutes
Serves- Depends on how much you can eat  :D but 5/6 will do :)

Ingredients-
Aromatic rice(not Basmati and small sized)- 100 gms
Full cream milk- 1 and 1/2 litre
Sugar- 200 gms
Raisins- 10/12
Green cardamom(powdered)- 7/8 pieces
Rose water- 2 table spoon
Cashew nuts(broken to pieces or pasted)- 10
Bay leaves - 2

For garnishing
Pistachio -10
Almonds- 5/6
Rose petals(fresh or dried)- 1 table spoon

Lets cook!
1) Boil 1/2 litre milk in a utensil. Keep it aside.
2) Boil 1 litre milk on medium heat. Add the bay leaves and pinch of the green cardamom powder.
3)Let the milk(2) get condensed till it's down to about 750 ml.  Should take about 10/12 mins
4)Add the washed raw rice in the milk. Wait till the rice is half done.
5) Add the Cashew nuts(pieces or paste) and raisins to the milk.
6)Keep the gas(heat) on simmer. Stir the mixture continuously to avoid burning of the milk. While stirring, add the 1/2 litre milk(1) few ml at a time to the condensed mixture.
7)After the rice is cooked completely, Add the sugar. Boil for 2/3 mins.
8) Add the rest of the cardamom powder and rose water. Switch off the gas(heat).
9) Let the dish cool down. Garnish it with the pistachio(sliced), almonds(sliced) and rose petals.
10) Serve after refrigeration.

Malai Curry ( Shrimp coconut cream curry)

This is a very popular Bengali (West Indian ) dish. I make it often. It's very yummy, rich and fills your stomach well too.

Preparation time- 15 mins
Cooking time- 15 mins
Serves- 6

Ingredients-
Shrimps(prawns)- 1kg
Coconut milk or powder- 3cups(Light) + 1 cup(dense)
Ginger and Garlic paste- 2 table spoon
Onion paste- 2 medium sized
Kashmiri red chili powder- 2 Table spoon
Cumin powder- 1 tea spoon
Whole cumin- 1/2 tea spoon
Bay leaves- 2
Musturd oil- 1/2 cup
Garam masala- 1/3 tea spoon
Boiled potato- 2 medium sized(optional)
Green chilli- 2-3
Salt- as per taste

For garnish-
Mint leaves or coriander leaves
Milk Cream
Pinch of chilli powder

Get set go...
1) Make a light mixture of coconut milk powder(4/5 table spoon) with warm water. Enough for 3 cups. Also make another one cup of the same but this time, dense(6 table spoon of powder) Or better if you have coconut milk already. Keep aside
2) Heat the oil in a frying pan or a wok.
3)On medium heat, add the cumin, bay leaves, a pinch of garam masala powder.
4) Add the onion paste( Grind pieces of 2 medium sized onions). Saute for a minute.
5) Add the ginger garlic paste, cumin powder and red chilli powder and saute.
6) When the mixture looks a little brownish, Add the prawns and the green chillies. Saute for 2 minutes.
Optional- You can add fried potatoes(Boiled prior to frying).
7) When you see oil coming out of the mixture at sides, add the 3 cups of light coconut milk(1).
8)Let it cook for 4/5 mins, covered with a lid.
9)Add the rest of garam masala powder and the cup of dense coconut milk(1) on top of it.
10)Leave it for a minute on heat.
11) To garnish, add mint leaves or coriander leaves, pinch of red chilly powder and milk cream.

Tip-
1) Light coconut milk is added first to avoid curdling of the milk. Make sure to add both of them at given point of times.
2)Freshly grated coconut can be added too along with the coconut milk. It enhances the taste.

Dahi vada(Dahi bhalla)- a snack preparation with yogurt and fried dumplings made of white lentil(urat dal)

This is a snack dish, I usually prepare in summer evenings for my super hungry family and guests..

Preparation time- 15 mins(excluding overnight soaking of the lentils)
Cooking time- 30 mins
Serves- 8

Ingredients-
Urat dal( white lentil)- 200 gm
yogurt- 500 gm
red chilli powder- 1/2 teaspoon
Roasted cumin powder- 1/2 teaspoon
Black salt- as per your taste
Salt- as per taste
Asafoetida- 1/2 tea spoon
Pomegranate- for garnishing
Vegetable oil- 1 litre(for deep frying)
Sev- 1/2 cup (optional, to garnish)

Chutney-
Jaggery- 5 tablespoon
Sugar- 1 tablespoon
Tamarind paste- 4 tea spoon

Cook away-
1)Soak the lentils in plain water for overnight.
2) Grind the soaked lentils to fine paste, next day.
3) Keep it in a warm place covered, for an hour. Let it ferment. If you don't see fermentation even after an hour, add baking soda into it.
4) Add a little salt in the paste.
5) Deep fry in shape of dumplings. (big or small)
6) Take a different container. Heat water in it. After it's done, add asafoetida.
7) Keep the deep fry dumplings immediately in the hot water to soak for 10 mins.
8) Take a bowl, mix the tamarind paste, jaggery, sugar and 4 table spoon water and boil the mixture for 5 mins. That's the chutney. Keep it aside, let it cool down.
9) Take a big bowl, add the yogurt, black salt, pinch of salt and roasted cumin powder. Add 1/3 cup of water in it. Whisk the mixture vigorously for a minute.
10)Take a small serving bowl, add 2 tablespoon of yogurt mixture(9). Put 2 dumplings in it. Add the yogurt mixture on top of the dumplings again(as per your desire). Slowly spread evenly the tamarind paste over the yogurt soaked dumplings.
11) Add pinch of red chilly powder, pomegranate and sev(all optional) to garnish.

Fried rice with shrimp and meatballs

This is a dish I usually cook on weekends when I'd like to rest and also cook a wholesome tasty food to keep the family happy and stomachs full.


Preparation time- 20 mins
Cooking time- 20 mins
Serves 4

Ingredients-
Meatballs- 200 gms
Shrimps- 250 gms
Eggs- 2, large
Red bell peppers- half, sliced/chopped
Green bell peppers- half, sliced/chopped
Yellow bell peppers- half, sliced/chopped
French Beans- 50 gms, chopped
Carrot- 1 chopped
Baby corn/Sweet corn- 50 gms, boiled
Onions- 2, medium sized
Ginger- 1 inch, chopped
Garlic- 10 cloves, chopped
Green chillies- 2/3
Coconut milk- 1/2 cup
Sweet tomato ketchup- 2 table-spoon
Soy- sauce- 2 tea-spoon
Vinegar- 2 table-spoon
Butter- 2 tea-spoon
Vegetable Oil- 7 table-spoon
Basmati rice- 2 cups

Spices-
Red chilly flakes- 1 tea-spoon
Black pepper powder- 1/2 tea-spoon
Ground Parsley- 1/2 tea-spoon
Dry red chillies(soaked in warm water)- 4
Salt- as per taste

Lets Cook!
1) Cook the rice prior to all the preparation.
2) Make a fine paste of 4 red chillies(soaked in warm water), 5 cloves of garlic and vinegar
3) Heat a pan and pour 1 table spoon vegetable oil in it. Add the paste(2). Stir for 2/3 mins. Add the chilly flakes. Stir more. Add the coconut milk.
4) Keep the mixture, a little juicy, aside.
5) Heat a large pan and add 4 table spoon of oil. Fry the shrimps, with a pinch of salt, for about 3 minutes.
6) You can either heat the meatballs in microwave or fry them to use.
7)Scramble the eggs in a different pan. Keep it aside.
8) Add butter to the rest of the oil(5) in the pan(medium heat).
9) Add 5 chopped garlic, the ginger, chopped onion, Stir well for 2 mins.
10) Add soy sauce, salt, parsley, black pepper, ketchup. Stir well.
11) Add the french beans, carrots, corn(half the quantity). Stir for 2/3 mins.
12) Add the boiled/cooked rice.
13) Add half of the fried shrimps, meatballs, scrambled eggs and bell peppers.
14) Stir well. Add the mixture(paste from 3). Stir for a minute.
15) Switch off the gas. Add rest of the fried shrimps, meatballs, scrambled eggs, bell-peppers and corn to garnish.
